Aperitivo Chiarè

In the northern Italian kitchen, the Aperitivo has an integral part to play. It is said to have originated in Milan. You consume Aperitvo before eating, and often the drink is accompanied by bite-size snacks like olives, nuts or potato chips.

It serves to stimulate the appetite, which is why it should not contain any protein or fat. Today, it is common in Italian cities, in the evening to meet for a drink and snacks with friends in a bar.

The classic Spritz (also known as Veneziano or on the Brescian side as Pirlo), is Aperol or Campari mixed with Prosecco or White Wine.

In Lazise, Lake Garda, however, they created a particularly delicious Aperitivo called the Aperitivo Chiarè with almost 5 per cent alcohol. The main ingredient is the Bardolino Chiaretto. It's a pink sparkling wine, that smells of raspberries, strawberries and cherries and is grown in the area around Lake Garda.

The recipe:

  • Bardolino Chiaretto sparkling wine 6/10
  • Elderflower syrup 1/10
  • Soda or mineral water 3/10
  • Fresh mint
  • Ice cubes

To serve, we recommend a choice of:

  • Olives
  • Grissini or melon wrapped in prosciutto
  • Salted nuts like pistachios
  • Garnished with seasonal edible flowers such as mint flowers
